Spinach Bake

Summer is just around the corner, and if you grow spinach you may experience that time when suddenly you have so much spinach you don’t know what to do! It’s great for salads, freezing, and pretty much adding it to everything…. Here is another great recipe we love that uses spinach. You can use your fresh grown spinach or spinach from the grocery store or farmer’s market.

Fresh spinach is so healthy.

Ingredients

  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 10 oz. fresh or frozen spinach, chopped
  • 1 can (4 oz.) mushroom pieces and stems, drained
  • 1 tsp. dried basil or 1 tbs. fresh basil, chopped
  • 1 tsp. minced garlic
  • 1/4 cup butter
  • 1/4 cup flour (can use gluten-free substitute)
  • 1/2 tsp. salt (optional)
  • 2 cups milk
  • 1 cup shredded mozzarella or Monterey jack

Use oven-proof skillet to cook beef and onion. Drain out grease. Add spinach, mushrooms, basil, and garlic. cover and cook for 5 minutes.

In a separate saucepan, melt butter, and stir in flour and salt. Mix until smooth. Gradually add milk, stirring. Bring to a boil. Cook and stir for 2 minutes or until the mixture is thickened. Pour mixture over meat. Mix together well. Top with cheese.

Bake uncovered at 350 degrees for about 30 minutes or until the dish is heated through.

Want to stretch the meal a bit? Serve with rice or pasta. Also, try using chicken or another type of meat in place of the ground beef for variety.
