Potato Pancakes

This recipe from our German grandmother is an excellent authentic German food and a great way to use up those extra potatoes. We loved it when our grandma made these. She had a knack for making them very thin. We’d sprinkle powdered sugar on them, roll them up, and eat them like a crepe.

Store bought or homegrown potatoes


  • 2 eggs
  • 2 tbsp. flour
  • 1/2 tsp. salt
  • 1/4 tsp. baking powder
  • 3 cups cubed potatoes

Put the first four ingredients and 1/2 cup of the cubed potatoes into a blender. Blend. Add the rest of the potatoes and blend. Fried and serve with maple syrup, jam, or powdered sugar.
