Homemade Tomato Soup

Deliciously flavored, homemade tomato soup

This tasty tomato soup recipe is easy to make and especially affordable when you have your own homegrown tomatoes. You could even double or triple the recipe and can the tomato soup for another day!

Ingredients:

  • 4 tbsp. butter
  • 3 tbsp. flour (can use gluten-free option)
  • 4 cups fresh tomatoes, cut in halves
  • 1/2 tsp. baking soda
  • 2 cups milk
  • salt & pepper to taste
  • garlic & onion power, season salt to taste (seasonings optional)

Bake tomatoes in the oven at 450 degrees for about 30 minutes. Broil for 10 more minutes. In a large pot, melt butter and mix in flour. Add tomatoes and boil for 5 minutes. Use a hand mixer to blend the tomatoes if you prefer.

Add baking soda and mix well. Add milk, salt, pepper, and other seasonings. Heat through and serve.

Garnish with basil or parsley if you would like.

Leftovers or a larger pot would be great for freezing or canning.

Canned homemade tomato soup is a wonderful winter treat!
