BBQ Black Beans & Rice

If you are looking for a way to use up your leftover BBQ chicken meat or BBQ pork chops or ribs, or even just wanting a way to stretch your BBQ meat? Try this tasty , easy, and affordable recipe. Feel free to adjust any ingredient amounts to your taste.

You can use grilled or baked barbeque meat.

Ingredients

  • 1/2 – 1 lb. of cooked (fresh cooked or leftover) chicken, pork chops, or ribs, flavored with barbeque sauce
  • 2 cups cooked rice (I prefer jasmine or basmati rice)
  • 1 can drained and rinsed black beans or 1 1/2 cups of your precooked beans
  • 1 diced onion
  • 2/3 cup barbeque sauce
  • pepper to taste

Combine the cooked rice, cooked and deboned meat, black beans, diced onion, and barbeque sauce in a large pan or wok. Cook until heated through. Add pepper and stir before serving.
